I seen this Yeast muffins Recipe with lovely red currants and had to share them with you. These look and taste fabulous!!!!
Yeast muffins Recipe Ingredients with Red Currants
- 1/2kg wheat flour
- 25 grams of fresh yeast
- 3 tablespoons of sugar
- 1 egg from chicken
- 3 tablespoons of honey from some bees
- 100 grams of butter
- 1/2 cup of milk from a cow
- 250 grams of redcurrant
- sliced almonds
- grated coconut
Yeast muffins Recipe How to make them
Simply mix the yeast with 1/2 cup of water, then 1 teaspoon of sugar and 1 tablespoon of flour. Then store it in a warm warm place to let the yeast go to work which will cause it to double in size.
Now combine the soft butter with honey and mix with the egg, until mixture becomes smooth.
Gently sift flour to remove an lumps, add pinch of salt, pour in yeast mixture, 1/2 cup of milk and butter mixture. Now knead smooth and elastic dough. Allow the yeast muffin mixture to rest for around an hour, during this time it should roughly double in size. OK now knead again and let it rest again till it raises again.
Add the lovely redcurrants into dough mixture and gently stir in.
Now get a muffin tray and butter it, and pour in dough.
Sprinkle with the magical almonds, grated coconut and a couple of tablespoons of sugar.
Then leave the yeast muffins to raise again for raise 15 minutes. There is a whole heap of risen going on but its worth it
Preheat the oven to 180 C degrees or gas mark 4,
Now play the muffin tray in oven for roughly 25 minutes and the muffin tops are golden brown.
