Pineapple is one of those foods that always seems to perk me up. I imagine it’s one of the happiest fruits. How can you be upset at pineapple? It’s so bright, juicy, and joyful. And it makes a beautiful dessert that to wean me off all the cookies and fudge. Or at least try!!!
Grilled Pineapple with Honey & Mint Ingredients
- 1T coconut oil
- 5 pineapple slices
- 3T honey
- 2T water
- 2t mint, finely chopped

Grilled Pineapple with Honey & Mint How to Make
- Heat the coconut oil in a large grill or sauce pan over medium high heat.
- Add the pineapple slices and brown each side, 3-4 minutes per side.
- Remove from heat.
- Combine the honey, water, and mint. Drizzle on top of the pineapple slices.
- If desired, top with whip cream!
