This Easy Greek Salad has saved me countless times. You know how you try to eat healthy and be good.
But those thoughts are quickly out the window as soon as I get hungry. Like, really hungry. Whether I’m too busy to have a quick snack or I’m trying to avoid second breakfast for the day. (Don’t judge like you’ve never had a second breakfast. Sometimes you just can’t make it to lunch.)
So you start scavenging through the fridge and the cabinets, looking for something quick and delicious. Usually that equates to something unhealthy…chips, cookies…you get my point.
But that’s what I totally love about this Greek Salad. I usually have all the ingredients on hand, it’s ready in just a few minutes, and it’s fresh and delicious! AND it’s healthy, so I feel so good after eating it. Not bloated and regretful from the junk food. Total win.
Easy Greek Salad Ingredients
- 2 large cucumbers
- ½c grape tomatoes
- ¼c kalamata olives
- ½ medium red onion
- 2T olive oil
- 4T red wine vinegar
- 3T lemon juice
- 1t dried basil
Easy Greek Salad How to Make it
- Peel and dice the cucumbers.
- Half the grape tomatoes
- Dice the red onion.
- In a large bowl, combine the cucumber, grape tomatoes, olives, and red onion.
- In a small bowl, combine the olive oil, red wine vinegar, lemon juice, and dried basil.
- Pour the dressing over the salad and mix well.
